SNAP Week 1 Day 1

Frank is definitely the shopper and the Chef (and the best husband!).  We have made a very good start.  Even with having family and friends over for a wonderful lunch feast, we still have $32.62 left for the week.  There is food in our refrigerator and cupboards for meals through Wednesday- breakfast, lunch and dinner!

Breakfast consisted of coffee, an egg and cream cheese tortilla wrap and a side of sliced oranges.


They say, "the proof of the pudding is in the eating"(1605)....I will add to that with the proof of how well we will do with this journey begins with the details in the planning.  Frank makes a conscious effort to look for a fresh variety of choices that basically start with a protein that is on sale and then fills in a meal plan that will be centered around it.

Kroger had chicken and Corned Beef on sale.  Frank cut down 3 whole chickens himself into parts.


For lunch today we decided on chicken two ways-Oven fried chicken and chicken cacciatore.  For our sides we made garlic mashed potatoes and a tossed salad with homemade Green Goddess dressing.  Our friends and family brought mac & cheese for a side dish, sodas they wanted to drink, brownies and peanut butter fudge for dessert.  We have enough leftovers for lunch tomorrow and another dinner.

 
 
With some of the chicken he cut up-back, necks, wing tips, trimmings- Frank will make a clear broth, he calls it "liquid gold".  With that broth we will have a soup for dinner this week and enough for a couple lunches.  With the wings, he will  possibly make an appetizer or save up more wings for a "wing ding".....a variety of buffalo wings, Asian wings, etc for a yummy future meal.  We usually save up about 3 pounds of wings-about 24 pieces.

Corned Beef will be used for a dinner with cabbage and potatoes (St. Patty's Day in January!)  With the left over corned beef we will have a dinner of Ruben Sandwiches.

  1. Sounds like a good first day........and your right Frank is awesome! Can't wait to see how the rest of the week turns out. I'm going to share this with Nathan to see if he wants to try it next week. Miss you tons.....hope you had a great holiday season!
